Just outside Kyoto, Mr Lyan visits Japan's first ever malt whisky distillery in Yamazaki. The water in the area is famous in Japan and Chief Blender Shinji explains how the water quality, and the local climate, contributes to the award-winning whiskies the distillery produces. Chief Blender Shinji also introduces Mr Lyan to the diversity of techniques the distillery uses in its whisky-making craft.

Rounding out his trip, Mr Lyan crafts an exquisite cocktail using Hibiki Japanese Harmony, taking inspiration from the approach to craft, appreciation of freshness and harmony with nature he’s experienced firsthand in Japan.
